Summer Tomato Avocado Salad
4 Cups of Cherry Tomatoes
2 Avocadoes, Diced
1/2 Cup of Red Onion ( Optional )
1/2 Cup of Chopped Cilantro
1 Lime Juice
1 tbsp of Olive Oil
Salt and Pepper to taste
I love this salad in summer!
It's such a refreshing dish and I loooove avocadoes, the butter from the forest!
You can use coconut oil instead of olive oil if you you'd like.
I don't like red onions so I usually don't put them in unless I'm making it for Sunday lunch after church or for a party.
It makes a beautiful side dish for your Italian, Mexican meal or for your lunch!
If you want to make this a main dish instead of a side dish, just add some chicken, goat cheese with blueberries or cranberries, or tuna for some protein!
Sweet corn, Parsley and Walnuts can also adds some nice flavor to it.
