Dairy Free Cheesy Spinach Quiche ( Crustless )
Serves 4 - 5
5 Oz of Fresh Spinach or Frozen ( Thawed & drained )
1 Cup of Dairy Free Shredded Cheddar Cheese ( I use daiya's Cheddar Style Shreds. You can find daiya's foods at Kroger. )
1/2 Onion Chopped
3 Eggs Beaten
1 tbsp of Parsley Fresh or Powdered ( I prefer fresh )
1 tsp of Nutmeg
Pinch of Salt and Pepper
1 tbsp of Olive Oil
1 tsp of Garlic Powder ( Optional .. I'm not a huge garlic person but if you love garlic go ahead and use 1-2 tbsp! )
1 Preheat oven to 350℉.
2 Over medium-high heat, heat olive oil in a large sauce pan or a skillet.
3 Add onions, garlic and stir-fry until onions are softened. Add spinach and cook, stirring occasionally until mixture has lost it's moisture.
4 In a bowl, combine eggs, cheese, herbs and spices.
5 Combine cheese and spinach mixture.
6 Bake in oven for 30 - 40 minutes.
