What are they?
A macaroon is a small biscuit, typically made from ground almonds, coconut, and/or other nuts or even potato, with sugar and sometimes flavorings, food coloring, glace cherries, jam and/or a chocolate coating. Some recipes call for sweetened condensed milk. Macaroons are often baked on edible rice paper placed on a baking tray.
It's so delicate and special. I've tried making them only once and it certainly wasn't easy to get the right texture.
I searched the history of Macaroons and here's what I found.

I'm determined to eat French Macaroons in France one day! and probably all the desserts that I could possibly fit in my stomach and my suit case. haha
I bought these cute, delicious Macaroons from a little store in Cool Spring Galleria, Tennessee called " Woops! Macarons and Cookie "
The lady was so nice there and we got to try few flavors.
Next week I'll fetch some piping bags and I'm going to try to make sugar free lemon Macaroons since there's a lot of lemons sitting in my fridge .. I'll post the results guys!
Just a tip here of how to make your lemons last longer in the fridge ..
1. Put all your fresh lemons in a jar ( jar with a rid required ) and fill it all the way up with cold water to cover the lemons.
2. Pop it in the fridge and the lemons should stay fresh and moist for at least 3 months!
