So I just came back home from our 1st Anniversary mini trip with my husband!
We had a wonderful time together. We stayed at a nice hotel, only an hour from our home and had dinner at a beautiful fancy restaurant called " Connors Steak & Seafood " Watched 2 comedy movies over the weekend! " I feel pretty " and " Overboard " I loved Overboard. It was funny but also heart warming family story and it bought me tears.
We swam in indoor pool and stayed up late just relaxing, Bowen playing a new card game he found on his phone and me watching YouTube videos.
The next day, Bowen treated me with a full body massage! I got a strong African lady and she was SO good! I love strong pressured massages.

So I know some of you know but I just wanna be open and say I lost a lot of weight last year from being anorexic and I was doing well while I was pregnant but after I had the miscarriage in January I fell back into my old habit of " Trying my best to eat less. "
Since about a month ago I've been eating more real foods not just snacks and desserts and I'm fighting harder to not listen to my stupid thoughts like " No, cut out the bread, rice, pasta, little less, you don't need it, you don't deserve it, you'll regret that you ate later, you are spoiled and greedy if you eat more, go do something to distract yourself from food etc.
And when I keep listening to these lies I start to believe them! " Oh yeah, I actually don't want another piece of bread, another chicken, another bite, I'm full. I like to feel light and stay active so I don't want to eat more cause I won't be able to run. "
All these lies after lies. I've lied to my husband multiple times about food too. I only had one toast but I'll tell him I had two. I'm supposed to be the wife he can trust like the Proverbs 31 wife and how can he trust me when I'm lying to him? " It's not a big deal, it's just about food. " my mind tells me. But IT IS A BIG DEAL! Lying is sin!!
I stopped lying to him about food. Sometimes I know he is disappointed at my meals but it's way better than lying.
I listen to audio Bible pretty much all day. ( sometimes Christian podcasts for wives and mothers for fun! ) Planting and watering the truth in my mind instead of listening to lies. I'm guarding my mind, my heart and my soul with God's words and Christ's love from lies.
I still have moments that I struggle. I want to listen to the lies. I feel tempted. But that's not gonna do any good to me, to my husband and it won't give any glory to God and that's not what I want and that's not how I want to live my life that God graciously gave me.
I found this girl on YouTube last year and I watched some of her recovery videos but I gave up cause I thought " I can't do what she's doing, I don't want to do what she's doing. "
But this morning I just felt like checking out her page again and I watched some of her recent videos.
I was really encouraged by her honesty more than seeing what she eats.
Women don't talk about these things openly nor do I do and it's easy for me to feel like " I'm the one with the issue and everyone is against me cause they don't like how I look and eat. "
I believe TRUST and OBEY is the key. When we trust and obey God, when I trust and listen to my husband's advice and act on it, I feel pure joy.
Trust and Obey is an act of love.
~ Walk in obedience to all that the Lord your God has commanded you, so that you may live and prosper and prolong your days in the land that you will possess.
~ Jesus replied, “Anyone who loves me will obey my teaching. My Father will love them, and we will come to them and make our home with them.”
~ Do not merely listen to the word, and so deceive yourselves. Do what it says.

So last week I took pictures of my simple meals and videos of me working out to give you a peek of my lifestyle ..

My favorite meal of the day! I think .. Probably because it doesn't take long to make and I don't have to think about it .. haha
I have four breakfast options.
1. Two Scrambled eggs with one English muffin and slices of bananas. 2. One toast with lots of peanut or almond butter & jelly & half of a banana sliced up. 3. A slice of healthy homemade pie ( such as apple butter pie, blueberry custard pie ) with coconut whipped cream and slices of bananas. 4. Two muffins.
Yes. I love bananas. I eat half of a banana every morning.
And Yes. I drink coffee every morning and I use homemade dairy free coffee creamer.
I eat 99% the exact same thing every single day unless I'm out and that is ..
Turkey sandwich! With a cup of coffee and either few pieces of dark chocolate or half of a bar, just something sweet.
I usually use whole wheat bread. ( I love those that has lots of seeds in it! ) But just for a change sometimes I use healthy store bought wraps.
My sandwich usually has .. Slices of turkey meat, a slice of dairy free cheese, tomatoes ( sometimes beets instead of tomatoes ), avocadoes, lettuce, mayo, little bit of hummus or homemade dairy free creamy dressing, and lots of nutritional yeast.
I like to cook the turkey with the cheese in the middle .. spray it with lots coconut oil and sprinkle some gentle sweet or stevia! I know.. maybe that's a bit weird but I LOVE IT!

This week I cooked more than I usually do. It's just me and Bowen so I don't cook every night. We have left overs sometimes and we eat out once a week together - usually .. Mexican! I love Mexican food!
I made Tilapia few times this week.
One night I was making a seasoning mix for fun and I cooked the tilapia with this seasoning mix and with some lemon juice .. It turned out absolutely divine!
It's so easy, delicious and I'm so addicted!
First, I GENEROUSLY spray the pan and tilapia with olive & coconut oil mix spray. ( Is it just me or do you love the sweet smell of cooking oil sprays too!? )
For the seasoning, I mix chili powder, lots of cumin, garlic powder, home grown oregano ( powdered ), turmeric, little bit of cayenne pepper and salt.
Sprinkle the seasoning mix on top, oil spray it again, sprinkle some lemon juice if you'd like and cook it in the oven for 20 to 25 minutes!
( I sprinkle two packets of stevia per fish on mine cause I just looove the combination of spicy & sweet. ♥ )
You can eat it with rice, tortillas with veggies, guacamole, cheese, sour cream etc.. YUM.
I also made Konnyaku Noodles with Chicken, Veggies and Dairy Free Peanut Sauce!
I used .. Konnyaku noodles, canned chicken, mix vegetables, fresh tomatoes, natural creamy peanut butter, peanut flour, dairy free sour cream, almond milk, coconut oil, cumin, cayenne pepper, onion powder, THM super sweet blend, salt and pepper to taste. Topped it with nutritional yeast and avocadoes! ( Yes. Avocadoes - Delicious butter of the forest .. that's another thing I eat everyday once or twice! )
This is one of my favorite recipes! Simple, easy Honey Baked Chicken Legs!
I had it with homemade Dairy free cheesy spinach quiche and some Indian rice!
The following night was leftover Tuna salad ( Tuna, onions, mayo ) and quiche with sweet potatoes and a salad.
Don't we all need desserts in life!?
Well at least I do. And I'm a big time ice cream woman!
Every night I eat half a pint of Halo Top ice cream with some sliced bananas, drizzle of melted dark chocolate, coconut whipped cream etc.
Sometimes I eat it with these cute gluten free cones too! So fun!
My favorite Halo is Peanut butter cup but I also love the new dairy free flavor Toasted coconut!
I love outdoors and fun workouts!
I was a swimmer for many years and I love moving my body, stopping what I'm doing and stretching throughout the day.
It refreshes my body, mind and soul, I feel energized and it fills me with so much joy!
I usually workout about an 40 minutes to 90 minutes a day, depends on what workout I'm doing.
Here's my current workout option.
1. 40 minutes to an hour bike ride 2. A nice nature walk with my amazing Above Ruby friends. About 40 minutes to an hour. 3. Aerobics dance with Richard Simmons! SO FUN! He's so funny, energetic and I just love it! This is an hour workout.

This sports is my new favorite thing!
I begged my husband to take me to this Rock Climbing place in Nashville last weekend and we had so much fun and I love love loved it!
I'd love to go back there soon and conquer the ones I couldn't make it to the top!
Definitely need to train my arms more!

I want to share these two articles I wrote a month ago on Facebook to share with you about my food and weight journey..
1. Confessing Food Freedom
Last month I was asked few times " So, what diet are you on? "
In Japanese, if you say you are on a diet it means you are trying to loose weight.
Well my dictionary here tells me that diet in English means " the food that you eat and drink regularly. "
So I thought, well to answer that question I'll have to make a looooong list cause I eat all sorts of foods. Haha
But I understand what they mean when they ask that question. And I just thought .. well I'm Paleo, Vegan, Omnivore, Keto, Sugar free, Dairy free, Gluten free, Trim healthy mama, Fast food .. pretty much everything!!
Because some of my meals has no meat like my breakfasts, and sometimes I eat sugar but sometimes I'm sugar free, sometimes I eat McDonald's but I also love eating a yummy seafood dinner at a nice restaurant, sometimes I try gluten free baking but I also love eating good pies at a pie shop.
I try to buy good quality fresh foods for us and cook fresh meals for my husband. I try to add veggies in my lunch and dinner. I don't like having just salad for a meal because it's boring to me even if I did add some protein like chicken, tuna etc. I just need some carbs. I love eating carbs with everything! lol
I love trying different types of breads like Nan, flat bread, Focaccia, etc Because I've never seen such variations of breads in Japan like here in America. It's quiet new and exciting to me!!
There's two things that I'm mindful of with my diet.
1, I try to cut out sugar as much as possible cause it gives me headaches and pimples. Thankful for sugar substitute THM products!! With Gentle sweet, Super sweet blend and stevia I can make desserts and drinks as sweet as I want without worrying!
2, I've been doing 95% dairy free lifestyle to help with the digestion issues I had for a very long time and it has been almost a month and I'm feeling absolutely amazing. Going dairy free honestly changed my life! I eat ice cream EVERY NIGHT. No kidding. I didn't have to stop eating ice cream when I started dairy free cause thankfully Halo Top has Dairy Free ice creams! Woohooo! I recently found my new favorite flavor, Toasted Coconut! Give it a try if you love coconut, it's amazing.
I have freedom. I think I'll call my diet freedom diet cause I don't worry anymore. Yes I probably lack some nutrients here and there, I don't do perfectly perfect with eating enough food sometimes and eating too much desserts and snacks, I enjoy studying about nutrition and body but I'm not obsessed.
My mind is set free.
I just enjoy the blessings from the Lord. I've learnt to receive and enjoy food with a thankful heart. I'm thankful for my husband who provides, let's me be creative and have some fun in the kitchen.
God has taught me a lesson and He's so good.

2. Weight! Body Image! Struggle!
The fact is, Up to 10 million girls and women in the United States suffer from diagnosed eating disorders. Of these, at least 50,000 will die as a direct result. Isn't this crazy?
The author of " You are not what you weigh " Lisa Bevere says, "Your present outward condition reflects a deeper inner turmoil. This captivity did not start on your exterior frame. It began in secret, deep within, and it has worked its destruction FROM THE INSIDE OUT. "
I confess I've been suffering eating disorder for awhile and I'll tell people I'm getting better, I'm working on putting some weight on, there's nothing you need to worry about .. but in my rebellious mind there's millions of voices that tells me, I actually don't want to change, I'm happy the way I am, why do I need change?, I wish people will stop telling me how to eat and what to eat, I'm so healthy! I want to eat what I want to eat, I'm an adult so I don't need to be told about food, There's so many women out there who are my size so why do I need to gain weight went they don't?, I wish I had their freedom about eating, weight is not a big deal .. these thoughts can go on and on.
And then I find myself feeling fearful when I get on the scale, and ashamed for not eating when I actually want to and sad when my favorite pants falls down from my hips.. When my life got out of control, as anger, sadness and jealousy fired up in my soul, food was the only thing that I could control in life. By controlling my eating habits I felt comfort, peace and like I had everything in order. No mess. No chaos. Perfection. On the outside everything seemed good while I was getting eaten by this disease from the inside.
Until my loved ones told me about my weight I didn't realize I was actually killing myself! I was killing my muscles, reproductive system, bones, my body that does not belong to me.
This body belongs to Christ Jesus my Savior and my Husband. I do not own it as the bible says my body is the temple of the Holy Spirit. ( 1 Cor. 6:19 )
Jesus answered, " I am the way and the truth and the life. " ( John 14:6 )
His way is life. So simple.

My nightly ice cream treat in a gluten free ice cream cone! YUM!!!
Today I'm talking about dairy free lifestyle.
So let me just share a little bit about myself .. I have had serious digestion problems in life and pretty much everyday I will feel and hear bubbles popping in my stomach all day long. Like literally from morning to night and I got used to it but it still wasn't fun! My husband always told me " It sounds like there's a talking monster in your stomach! " .. haha
I tried probiotic gummies, enzymes, and few other things but nothing really worked or it just made it worse and I'd suffer with stomachaches.
I also HATE swallowing pills so I always went for the gummies which are probably less effective than pills..
As we all know.. Our mental state can affects our bodies sometimes and for example my stomach monster became more active when I was feeling anxious, stressed or nervous around people.
I'll be dining with my family or friends and suddenly my stomach monster becomes so loud talking to me when I'm trying to listen to others. And then I feel like I have to get home and lay down for a bit to calm this monster.
Last week there was an occasion that really made me think about this issue I have and I decided to address it with a different strategy that I haven't tried yet - Dairy Free!
It's been a week since I started this dairy free journey and I'm feeling so good and wonderful! I have more energy and I feel less hunger throughout the day.
Here's some example of what I'm eating ..
As you all know I have a massive sweet tooth and I love having desserts for breakkie and pretty much anytime for any meal. I can make dairy free desserts but I wanted to eat meals that give me more energy and strength.
So actually for a week I've been having the same breakfast every morning and I love it! Which is ..
One English muffin - I love love love them - one half with two scrambled eggs with 1-2 tbsp of nutritional yeast & ketchup on the side and the other half with natural peanut butter & strawberry jam topped with slices of bananas! Plus a small cup of coffee sweetened with stevia and I add 3-4 tbsp of my dairy free coffee creamer.
This breakfast totally rocks my morning!
For lunch I usually have turkey sandwich packed with veggies and since I can't use cheese, I sprinkle some nutritional yeast - about 2-3 tbsp - on top of turkey meat while I quickly fry them in a fry pan.
I spread mayo and sometimes hummus on whole wheat bread and I always put lettuce, tomatoes, avocadoes, and sometimes beets or olives! I'm totally obsessed with black olives now .. they are so tasty and really good for skin! Packed with Vitamin E ( High-fat plants usually contain the highest amounts of this powerful antioxidant ) Iron and Copper!
And I finish off lunch with a cup of coffee with few pieces of chocolate or slices of bananas with peanut butter or healthy Nutella, just something sweet-ish. And I have a similar thing for my afternoon snack.
Dinner is different every night. For example I had spaghetti few times this week and I used nutritional yeast instead of cheddar cheese & sour cream and I added a side of salad to fill me up more. I used to just use a lot of cheese & sour cream and there will be no space left for salad.
I'm a girl who needs dessert every night - usually Halo Top ice cream - half a pint or more. ( Halo has dairy free flavors! ) If I'm staying up late that night I'll eat hummus, banana with peanut butter or popcorn etc for a late night snack.
Just a little note here to all the wonderful Trim Healthy Mama ladies. Many of my meals have to be crossovers since I don't need to loose weight. My usual breakfast and lunch that I mentioned above are crossovers.
Now I want to introduce you to some of the dairy free products I bought last night from Kroger. I haven't tried the shredded cheese yet but I literally just tried the dairy free sliced cheese with my sandwich and WOW.. it's super good!
My favorite dairy free Halo Top ice cream flavor is Oatmeal Cookie so far, but I also like Chocolate Banana!
If you haven't heard of nutritional yeast you have to try it whether you're dairy free or not!
It's like powdered cheese to me .. it looks like this and it's soooo delicious!
I get mine from Trim Healthy Mama! Highly recommended dairy free product!
So I think I'm going to keep up this dairy free life style for awhile. I ate 95% dairy free this week ( I had few pieces of milk chocolate I bought from the cute chocolate factory I visited in Franklin )
It's not like I'm allergic to dairy so I'm not gonna skip a delicious coconut cream pie or a wonderful scoop of ice cream from a cute ice cream shop when I get to go out to eat with family and friends. But this lifestyle is helping me feel way better with more energy and I find it pretty easy to keep it up.
Praise the Lord for encouraging me to get healthy and He is so good for surrounding me with wonderful family who's so knowledgeable about health.
I find JOY and STRENGTH in the Lord who's teaching me about - balance - and I'm so thankful.
P.S.. Last night I went out with these wonderful Above Ruby girls and my great friend Shaina had her first Waffle House experience!
I actually took my nutritional yeast in my bag with me to sprinkle it on my scrambled eggs and few of the staff were like " What's that!? " and I said " It's nutritional yeast! It's really good for you and it tastes like cheese! " and then an older man said " I hope that yeast doesn't bloat up your stomach! " haha

So we have nooo idea who in the world played this prank on us but guess what we found last night on our porch!? A cat and a mouse trap!!! 🐈
She had a collar that said " Meow " but I named her " Chika " 😂
She kept wanting to come inside last night but we left her outside and she was still here this morning! So I fed her some tuna and let her inside.
She loves talking ( I mean meowing! ) even while she eats but she's not a feisty one.
We might have a pet now! 😸
I just have NO IDEA who left her here!!!
We asked around but no one seems to know. I did catch 4 mice this week but I only told few of my girl friends that I did and none of them owns a cat. In fact, none of our family or neighbors owns a cat.
Obviously someone knew we were having mice problems and thought giving us a cat and a mouse trap is the best solution to it?
And guess what ..I hate cats. When I was growing up we always had millions of wild cats outside. ( we did have 2 or 3 as a pet but it multiplied and became a tribe so we kept them outside with the wild ones ) and I didn't like them at all. Not a bit.
To be honest, I can take care of animals and do all the work but I'm really not a pet person. But I don't mind this cat.. cats are very easy to take care of and my husband Bowen told me cats don't stink cause they clean them selves well and also kills all the bags inside the home. ( and of course mice ) so yeah there's some benefit there ..she's a pretty one, almost looks like a Cheetah!

So today I got to hang out with my super awesome gang in downtown Columbia, TN and I honestly had THE BEST SWEET GIRLS DAY EVER!!
These girls are so much fun and so laid back at the same time. I just love them so much and I'm so blessed to have them in my life. ( Shaina & Bethany can you please just stay!? )
Guess what I also had today! THE BEST ICE CREAM EVER.
If you know me, you know I eat ice cream every night. I literally can't complete my day without ice cream. No, not milk shakes or frozen yogurt or gelatos. ICE CREAM.
At home I eat healthy Halo Top ice cream usually and sometimes I try other brands too like Ben & Jerry's or Breyers.
I've been to a lot of ice cream shops in my life and most of them were a good experience just because I'm getting to eat ice cream! haha But I've also had some bad ones too.
So I think I can call myself a little ice cream expert right?
To be hones I wasn't expecting anything special from this place cause the shop was called " The Balloon Shop " and yes they sell balloons! \ ( ^ ^ )/ They also have some cute toys for the little children, some snacks.. and they have HOMEMADE ICE CREAM that actually tastes like homemade ice cream!
I tried few flavors before I ordered mine and the grandpa who served me was so generous .. he gave me a big spoon full of all the flavors I've tried! ( I should have got a picture with this kind ice cream making grandpa .. Next time! )
All the flavors were amazing. It wasn't too sweet or too sticky or sugary. It didn't taste fake. Just the right sweetness, delicious and comforting.
After trying many flavors .. I chose Banana Pudding and Butter Pecan.
I HIGHLY RECOMMEND trying their beautiful homemade ice cream guys!
We also went to a pie shop called " Pie Sensations " and Oh my goodness.
The shop was SO ADORABLE! I honestly wanted to buy a slice each of all their pies and take it home .. but my fridge is full of goodness sweets now - homemade and store bought - that I have to finish eating first! haha
So I chose one. I've got a big slice of Chocolate Turtle Pie to take home and ate it for dinner.
Beautiful flaky pie crust, a chocolate pudding layer ( it's not exactly like a pudding. similar to the texture of a chess pie. ) and then there's a caramel layer and drizzled chocolate and chopped pecans on top! SO GOOD, it tasted so fresh and homey!
They are award winning bakery in Columbia and you can also order their pies online. They have gluten free / sugar free options too.

Our adventure wasn't just food! ( Although those were definitely my highlights! )
We also went to a cute book store and a huge vintage market / antique store called " Blue 32 ". They have a good mixture of antique & modern things for a reasonable price and they also have a cute café where you get to sit on cute antique chairs and couches with a cup of freshly brewed coffee! ( with a yummy homemade cookie that's literally a size of my face if you'd like! )
I'm so glad that we were blessed with a nice warm spring weather with a nice breeze. I enjoyed exploring this cute little downtown in Columbia and catching up with these beautiful girls! Thank you Lord!
What are they?
A macaroon is a small biscuit, typically made from ground almonds, coconut, and/or other nuts or even potato, with sugar and sometimes flavorings, food coloring, glace cherries, jam and/or a chocolate coating. Some recipes call for sweetened condensed milk. Macaroons are often baked on edible rice paper placed on a baking tray.
It's so delicate and special. I've tried making them only once and it certainly wasn't easy to get the right texture.
I searched the history of Macaroons and here's what I found.
" These delightful almond macaroons are widely known under their French name "Macarons de Nancy" and originated from the town of Nancy in the Lorraine region of France. Originally prepared by Sisters in the downtown of Nancy, the fine Macarons rapidly became famous throughout Lorraine and a classic in the French gastronomy and confectionery! "
I'm determined to eat French Macaroons in France one day! and probably all the desserts that I could possibly fit in my stomach and my suit case. haha
I bought these cute, delicious Macaroons from a little store in Cool Spring Galleria, Tennessee called " Woops! Macarons and Cookie "
The lady was so nice there and we got to try few flavors.
Next week I'll fetch some piping bags and I'm going to try to make sugar free lemon Macaroons since there's a lot of lemons sitting in my fridge .. I'll post the results guys!
Just a tip here of how to make your lemons last longer in the fridge ..
1. Put all your fresh lemons in a jar ( jar with a rid required ) and fill it all the way up with cold water to cover the lemons.
2. Pop it in the fridge and the lemons should stay fresh and moist for at least 3 months!
So after almost two years of stitching ..
I've finally finished my Psalms 23 cross stitch picture.
I love this picture, it's very cute and I think it will be perfect in the children's room! ( We don't have children yet but one day in God's time yes we will! )
Everyone tells me cross stitching takes a lot of patience. And it does but when I'm stitching, I'm enjoying it, I'm not in a hurry or frustrated just because I know it's going to take a long time.
I know I just need to take one stitch at a time, one picture at a time, and one day at a time and if I do, eventually I'll complete it.
Stitching is just like life!
I remember at one stage when I was single, I worried if I was ever going to get married and I felt like I had to find a perfect godly man to marry as soon as possible. but when I was worried and in a hurry to become a married woman, was I enjoying being single? Was I putting all my effort and passion into what was right in front of me?
Ummm.. NO. I could have used that energy that I used to worry for serving the Lord, my family, church or hobbies, schooling, work etc.
Psalms 23 begins with " The Lord is my shepherd, I shall not want. "
I know I can ask my God to bless us with children, I know I can talk to him about my needs and wants to Him in prayer at anytime! Cause He is always there for us and He loves it when His children comes to Him and seek Him in everyway.
" Jesus said, Let the little children come to me.. " Matthew 19:14
" Come, my children, listen to me. I will teach you the fear of the Lord. " Psalms 34:11
But we shouldn't focus only on the future and what we don't have right? It will only take away our joy!

I think of myself as the needle, just taking one step at a time. If I skip a square, it's obvious that I'll have to go back and fix it. If I don't fix it right away.. well it will take longer to correct my mistake.
Sometimes we make mistakes without knowing. But if we have a teachable heart, when we recognize our mistakes, we won't get angry but humbly receive the teaching, learn and move on.
I don't need to feel like time is chasing me.
Sometimes when I know I'm pressuring myself about nothing, I literally, physically turn around and ask myself " Kahoru, what's chasing you? Nothing! "
" The Lord himself goes before you and will be with you. He will never leave you nor forsake you. Do not be afraid. Do not be discouraged. " Deuteronomy 31:8
I just need to focus on now and trust the Lord who has set the path for me.
Isn't that amazing!? Just think about it for a second, use your imagination and just picture the Lord going before you.

I finished one chapter and I get a reward of having it beautifully framed ..
I found this cute little frame shop in downtown Dickson, Tennessee called " Best Little Frame House " and I asked my amazing kind husband take me there and I ordered a beautiful white wooden frame!
Just to inform you.. getting a masterpiece framed is not cheap.
So I think it's a good thing that it takes me so long to finish one project! haha
I'm so excited to start this blog! Finally!
I'll be sharing my dessert recipes, craft creations, articles, photos .. many things!
But for now I'm just figuring out how to use this blog site and having fun with it.
I'm definitely not good with technology and I'm not so good at designing.. so I know it's gonna take awhile to make this website " look pretty " but hey! One step at a time right!?
